A novel Cage-like porous starch (CPS) were prepared in three steps, first, the starch pretreated in heat water and then crosslinked by sodium trimetaphosphate (STMP), last, using a mixed enzyme system partial enzymatic hydrolysis of starch. The preparation conditions which are expected to affect the adsorption capacity were studied systematically and the CPS morphology, porosity, swelling power, adsorption capacity, crystalline nature, Cytotoxicity of these starch samples were measured and analyzed. In addition, Functional compounds of plant compounds loading and releasing properties were investigated with curcumin as a model on the basis of single-factor study. The results showed that the CPS which was heated at 65 C for 5min and crosslinked with 6% (w/w) STMP (CPS-6) possessed remarkable superiority in terms of adsorption capacity among all the starch samples tested. The swelling power of crosslinked porous starch was lower than that of un-crosslinked porous starch. The CPS-6 also had the highest porosity and largest average pore diameter. The loading ratio of curcumin was significantly influenced by loading time, dissolution medium, loading temperature as well as curcumin concentration. Furthermore, the release profile contained two main expulsion processes: an initial burst release followed by a sustained swelling-controlled release.<br/>These results indicated that the novel cage-like crosslinked porous starch as a carrier can be considered as a platform to encapsulate and release natural compounds and drugs.
