The parallel development of regulatory guidance for the control of glycidyl esters (GE) and 3-monochloropropane-1,2-diol (3-MCPD) provides an opportunity to explore differences and similarities in regulatory management approaches for compounds with different toxicological profiles. While both compounds are created during the production of refined vegetable oils, risk assessments have come to different conclusions about the mechanism through which these compounds cause toxicity. These differences in toxicological mechanism have consequences on how agencies are developing regulatory limits for these compounds in foods. Alternatively, the creation of best practice guidance for the control of these substances is following the same path for both compounds. Food toxicological risk assessment, like all sciences, is a constantly evolving field, and the ongoing development of regulations has taken advantage of new developments in the field, such as the use of the benchmark dose approach for determining a safe level. In addition to addressing the underlying science behind the regulations, this presentation will also explore from a global perspective the process of how regulations are developed.
