Biogenic amines have attracted interest among researchers due to their importance as biomarker in determining the quality of food freshness in food industry. These compounds are also reported to have negative impact on human health such as headaches, vomiting and diarrhea. Conventional methods for biogenic amines detection such as gas chromatography (GC) and high performance liquid chromatography (HPLC) require high-end instrumentations and could only be conducted in laboratory. Thus, a rapid and simple technique that is able to detect biogenic amines is needed. This study focused on the development of new optical sensing material based on zinc(II) salphen complex for biogenic amines detection. Zinc(II) salphen complex bearing electron withdrawing group, F, COOH and NO2 were synthesized and the structures were confirmed by spectroscopic techniques. The interaction between the synthesized metal complexes with selected biogenic amines has been examined by means of UV-Vis titration and fluorescence study. All complexes showed high affinity towards biogenic amines with Kb (binding constant) values obtained in the magnitude of 108-109 M-1 and also resulted in enhancement of fluorescence intensity. Therefore, the complexes could be developed as promising histamine optical sensing materials that can be applied in the food industry, especially in controlling the safety of food in order to remain fresh and healthy for consumption.
