Sulfur-containing volatiles are important for the flavor of many foods and beverages owing to their low odor thresholds and their pronounced odor qualities. Numerous polyfunctional thiols, in particular those possessing a 1,3-oxygen-sulfur function, are of interest. Capillary gas chromatographic enantioseparations of homologous series of β-mercaptoalkanones and β-mercaptoalkanols using chiral stationary phases are described. Strategies for determinations of the configurations using a combination of <sup>1</sup>H-NMR anisotropoy methods and lipase-catalyzed kinetic resolutions are presented. The assessment of the sensory properties of the stereoisomers by capillary gas chromatography/olfactometry is demonstrated, and structur-odor relationships for these classes of sulfur-containing chiral volatiles are outlined.
