Lignocellulosic biomass is composed by the assembly of biomolecules that present a whole range of functionalities among which interfacial properties. The stabilization of Pickering emulsions by particles obtained from this biomass would therefore perfectly meet the problems of replacing surfactants with renewable emulsifiers that are more respectful of the environment. This study has three principal axes: (i) understand how the functionalities of lignocellulosic particles influence the adsorption at the interface and consequently the emulsification processes, (ii) observe the organization of particles at the interfaces and (iii) establish relationships between particle characteristics, interfacial organization and emulsions properties. It is here demonstrated that the different types of nanoparticles investigated are able to produce ultrastable Pickering emulsion that can serve as template for various materials.<br/>
