Understanding the distribution of bioactives and surfactants in an emulsion system is important for designing an effective and stable delivery system. Particularly, the interfacial characteristics influence diverse properties as initial particle size distribution, stability to droplet aggregation, susceptibility to chemical degradation, and behavior in the gastrointestinal tract. Herein, we applied Raman microscopy to map the distribution of bioactive compounds such as carotenoids in emulsion droplets. In addition, we fabricated amphiphilic gold nanoparticles (AuNPs) that can self-assemble at oil-water interfaces. The amphiphilic AuNPs were fabricated by mixing citrate-coated AuNPs and octanethiol in hexane overnight. We successfully applied those amphiphilic AuNPs for in situ mapping two emulsifiers, b-lactoglobulin and Tween 20 adsorbed to droplet surfaces in model oil-in-water (O/W) emulsions.
