Bee pollen is known to possibly have particular lipids in its mixture, some of which could be useful in developing anti-inflammatory medicine. The reason this project came together is due to a desire to possibly allow for a more natural medicine to be made as an anti-inflammatory from bee pollen lipid extract. To extract lipids from bee pollen, supercritical fluid extraction (SFE) is used to attempt to extract lipids using a variety of pressures, temperatures, and extraction time to determine the optimal conditions. Using all of these different conditions allows for a wide range of results to help in the distinguishing of the optimal set of conditions. To attempt and characterize the extract, high-performance liquid chromatography (HPLC) and Fourier-transform nuclear magnetic resonance (FT-NMR) are used to compare extracted samples to known standard lipids. The standard lipids are stearic acid and triglyceride which are both to be run through HPLC and FT-NMR. The use of standards allows for the comparison of extracted samples versus what a known lipid looks like. After all of the data are collected from both instruments, they are analyzed and determined as to which, if any, of the sets of conditions are optimal for extracting lipids from bee pollen.
