Post-processing contamination of foods by spoilage and pathogenic microorganisms remains a critical issue in the food industry worldwide, with significant impacts in both human health and food waste. Microorganisms that persist on food contact and non-contact materials as biofilms exhibit enhanced resistance to standard methods of cleaning and sanitation. To improve the sanitation of such processing and handling materials, we have synthesized a polymeric coating with both antimicrobial and antifouling properties. Using coat-cure technologies, we have introduced cationic and N-halamine antimicrobial functionalities and styrene maleic anhydride low surface energy moieties onto polypropylene surfaces. Coatings reduced initial adhesion of Pseudomonas aeruginosa and Listeria monocytogenes by more than 2-log cycles, and facilitated removal by hot water rinse. Electron and confocal laser scanning microscopy revealed that the coatings inhibited the ability of P. aeruginosa to establish a biofilm. Such antifouling coatings may reduce persistence of pathogenic and spoilage biofilms in food processing environments, in support of reducing food spoilage and waste.
