Increased efforts are currently being directed toward determining critical sources of trace metal contaminants in food and beverages. Although there are many possible sources of elemental contamination throughout the food supply chain, the processing of foods has more recently been given further attention as a potential source of contamination. Food processing aids are a critical part of the manufacture of food, where they serve a specific technical purpose during processing. However, these processing aids can also act as a potential source of trace metal contaminants that can transfer to food and beverages. Here, we will focus on the process aids used in common industrial processing methods including filtration, beverage fining, and hydrogenation, which have been targeted as potential sources of trace elements with varying degrees of toxicity. Finally, we will review potential remediation methods to reduce elemental transfer occurring during processing.
