This presentation will cover some of the more common compounds found in barrel aged beers which are associated with the brewing process. Specific compounds which will be discussed are benzaldehyde, g-Nonalactone, Caryophyllene, Humulene, ; β-Damascenone and 4-ethylphenol. Causes and sources of these compounds will also be presented.<br/>
