In my talk, I will present the application of surface-sensitive infrared-visible sum frequency generation (SFG) spectroscopy to probe formation of ice and hydrates next to solid surfaces. To understand the effect of surface energy, we have measured the structure of water and ice next to surfaces covered with self-assembled monolayers with different head groups. We have also observed lower freezing temperature for water next to hydrophobic surfaces. For salt hydrates, we observe segregation of brine solution next to sapphire substrates.
