Planets form by accreting gas and solids within disks around young stars. While planet formation was historically thought to take place during the Class II stage of star formation, i.e. an isolated protoplanetary disk, evidence is mounting that the early stages of planet formation are already underway in embedded (Class 0/I) protostellar disks. Characterizing the chemistry in embedded disks is therefore critical to assembling a complete picture of the chemical reservoirs available for incorporation into planetesimals. In this talk, I will present recent ALMA observations covering a suite of simple and complex molecules towards five protostellar disk candidates.  I will highlight how the physical conditions in these embedded sources impact the chemistry relative to more mature disks.  Additionally, we detected a rich organic chemistry towards three of the five disk candidates, suggesting a possible connection between hot corinos and incipient disks.  With these observations we are beginning to probe chemical evolution across the disk lifetime as well as to disentangle the different small-scale structural elements within the protostellar environment.
