While peanuts, cashews, and hazelnuts get a lot of attention in the food industry, tiger nuts are not well known. The tiger nut (Cyperus esculentus) is an edible tuber that can be found in various parts of the world such as Spain, Australia, Africa, North and South America, and some areas in China. The tiger nut offers many health benefits which could be used to improve the lives of people all over the world. Tiger nuts are believed to consist of high levels of starch, fat, fiber, calcium, phosphorus, and sodium, which if consumed, would cure, or prevent many health issues such as colon cancer, coronary health disease, obesity, diabetes, and gastrointestinal disorders. However, due to a lack of knowledge regarding the nutritional value of tiger nuts, the tubers are often overlooked. The intention of this research is to analyze a sample of tiger nuts from Ghana using the standard Official Methods of Analysis of Association of Official Analytical Chemists (AOAC) to obtain data on the nutritional value, chemical composition, oil content, and medicinal properties of tiger nuts.
