Capsaicinoids are molecules found in hot peppers that are responsible for the pain response associated with eating these foods. In our previous research, Tb(III) chelates built from an ethylenediaminetetraacetic acid scaffold have shown a strong luminescence enhancement in the presence of capsaicinoids. A new bis-amide EDTA chelate has been synthesized to selectively bind capsaicin by taking advantage of the solubility properties of cholic acid appendages. The synthesis, characterization (<sup>1</sup>H and <sup>13</sup>C-NMR, IR, MS) and preliminary luminescence data shall be presented.
