Digestion of food is a complex multi-stage physiological process involving bio-physico-chemical processes from breakdown of food to nutrient absorption. The kinetics of conversion of food components to nutrients affects their bio and caloric availability, and satiety. Since studies involving human subjects are expensive and time consuming, mathematical modeling can augment the understanding of biochemical transport phenomena associated with food digestion. Modeling can also provide guidelines to food manufacturer to design novel food products with desirable precision nutrition outcome. The current state of the art in modeling the flow of food in human GI tract with future outlook will be discussed.
