The University of Minnesota, Morris (UMM) is a 1500-student undergraduates-only campus on the plains of central Minnesota. Much of our instrumentation instruction (especially in advanced biochemistry) comes in the lecture – rather than the laboratory – classroom. Similarly, carbohydrate (bio)chemistry is an area where more graduate and undergraduate experience is sorely needed, but students rarely have a foundational background within the field. There is no way to reasonably cover the breadth of carbohydrate biochemistry in any depth in a one-semester elective, even in a sixteen-week class. Presented here are two activities relating to the biochemistry curriculum: first, a proposal generation process for including more grant-writing in undergraduate curricula, and second, a series of modeling exercises to help students grow their confidence in manipulating larger biochemical molecules in three dimensions.
