Salvia Apiana (American White Sage) is an evergreen perennial shrub native to the southwest United States and Northwest Mexico. The plant is sacred to native American tribes in the region, used for it’s medicinal purposes, specifically anti-inflammatory properties. This research examines the anti-inflammatory effects of American White Sage. In this study we extracted from sun dried leaves with ethanol as the solvent via Soxhlet extraction, and a Lipoxygenase assay was performed to determine inhibition of lipoxygenase oxidation of poly unsaturated fatty acids. 15-lipoxygenase is an enzyme responsible for oxidizing poly unsaturated fats into metabolites, which form into leukotrienes, of which causes an inflammatory/allergic response. The preliminary results indicate the percentage of inhibition of 62.21%(+/-7.54), n=4. Further research will be done with similar plant products.
