Natural antioxidants are known to prevent certain physiological and pathological processes caused by free radical reactions. These antioxidants are known to prevent some diseases such as cancer, cardiovascular diseases, as well as aging. An example of such an antioxidant is quercetin, a plant derived flavonoid which is mostly present in food such as onions, tea, apples, and red wine. Quercetin is the most common flavonoid widespread in plants and food of plant origin. Several methods ranging from HPLC, derivative spectrophotometry, gas chromatography, and electrophoresis have been developed to measure the activity of antioxidant.<br/>This work simplifies already established electrophoretic methods for quercetin determination. The detection limit of quercetin can be significantly improved (without any reagents added) by simply selection of optimum parameters such as solvent, pH, buffer, wavelength, the ionic strength, and temperature
