Increasing attention has focused upon biologically active plant polyphenols for many beneficial properties, with applications in health and nutrition. The non-specific interactions between plant polyphenols and cell membranes can modulate physical properties of membranes, which in turn can affect the conformation of proteins and perturb membrane-hosted biological functions. This study examines non-specific interactions of plant polyphenols with model membranes having varying concentrations of cholesterol. The perturbation of the model membrane by plant polyphenols is sensed by diverse techniques not complicated by the use of probes which may themselves perturb the membrane. The nature and extent of interactions greatly depend on the concentrations of cholesterol and plant polyphenols. Our findings provide increased understanding and effective use of plant polyphenols in disease therapy.
