Gout is a crystal arthropathy characterized by monosodium urate crystal deposits in joints. One of the main symptoms of gout is oxidative stress caused by excess uric acid in the blood. Tart cherry consumption is known to be an effective treatment for the oxidative stress caused by gout. This effectiveness is due to the polyphenol, anthocyanins, in tart cherries acting as an antioxidant and quenching free radicals. Anthocyanins are the molecule responsible for the pigment of tart cherries. While research has been done examining the anthocyanin concentration, antioxidative effects and how they correlate, there is not much research quantifying that correlation using different forms of tart cherries. In this research, the correlation between anthocyanin concentration and antioxidative capacity was investigated using tart cherry juice, tart cherry concentrate, canned tart cherries, and dried tart cherries. Although other research has used ethanol or methanol for anthocyanin extraction, acetic acid acidified water was used for a greener extraction. Different samples of each form of tart cherry in acidified water were agitated using a shaker, a centrifuge, or a sonicator to aid in extraction. Anthocyanins in each form were quantified using the spectrophotometric pH differential method. These samples were used in a TEAC (trolox equivalent antioxidant capacity) assay to get the percent inhibition of the ABTS radical. Through calculation of the Pearson correlation coefficient, preliminary data suggests a positive correlation between anthocyanin concentration and antioxidant capacity. These results will give a better understanding of the ratio of quantity of antioxidant benefits to the quantity of tart cherry for gout patients.
