Emulsions play a vital role in many industries, such as food, pharmaceutical, cosmetics, paints and agrochemical industries. Oil in Water (O/W) emulsion, that is oil phase dispersed in aqueous phase, will facilitate the delivery of hydrophobic bioactive substances especially for food and nutraceutical applications. Black pepper is the most important and widely consumed spice in the world and hence considered as the “King of Spices”. Black Pepper Oleoresin (BPO), is a combination of essential oils and resin, which are responsible for the total flavor profile and pungency of black pepper. These essential oils and resin are not easily dispersible into aqueous food products due to the presence of hydrophobic volatile components and highly viscous resins. BPO in the form of an emulsion-based carrier system could be an effective method for enhancing its bioavailability, dispersibility, shelf-life as well as preventing the degradation of active ingredients. The objective of this study is to develop stable liquid emulsions of BPO using different methods of varying energy intensity. BPO emulsions were prepared with different concentration of synthetic emulsifiers (i.e. Tween 80, Span 20 and Titron X-100) and modified synthetic emulsifiers (i.e. Tween 80M, Span 20M and Titron X-100M). The formulated stable emulsions were evaluated for average droplet size, zeta-potential, conductivity and rheological behavior in order to analyze and understand the emulsion stability. The BPO liquid emulsions showed different particle sizes with mean diameters of 20–40 µm depending on the emulsifier concentration. Similarly, Zeta-potential and conductivity values of BPO emulsions also increased with an increase in emulsifier concentration. The formulated emulsions were stable for different durations during storage at ambient temperature (25±2 °C). These results suggest that the BPO emulsions have the potential to be used as an additive for different food and nutraceutical applications with appropriate sensory quality.
